Dive into sustainability with Slow Food Miami's Slow Fish Collab Series, a must-attend event for environmentally-conscious seafood lovers. Led by Chef Allen Susser, this culinary initiative comprises three dinners that shine a spotlight on all things related to sustainable seafood from responsible practices to the art of dining.
The series kicks off on Thursday, March 14, with an exclusive dinner hosted by Chef de Cuisine Diana Tandia of Essensia Restaurant at The Palms Hotel & Spa. A Slow Food Snail of Approval honoree since 2011, Essensia Restaurant is renowned for its mindfully-sourced Mediterranean-style cuisine with Asian influences. Chef Diana, a fan of seasonally inspired cuisine, will skillfully craft dishes that highlight sustainable-sourced seafood, featuring contributions from South Florida aquaculture sponsors, Sun Shrimp and Blue House Salmon. The dinner will be paired with wines selected to enhance the seafood's flavors. During the dinner, guests will enjoy a screening of conservation-minded films by Sereia Films, a local non-profit that shares seafood stories of local influencers, chefs and industry professionals, united by a commitment to sustainability.
